I think I remember how the "unsupported stations" thing works.
Basically, with the box toggled off, if you remove all of the blocks that connect a station to some sort of fixed point (like the ground on planets, or an asteroid), then the station will begin to free-float, or tip over. If you toggle the option on, then the station will still stay stuck in mid air even if it's unsupported.
And you were mostly right on the "allow convert to station" option. If enabled, then you can convert a ship into a station, which (combined with the "unsupported stations" option) could mean that it will never move from its position again until converted back into a ship. This could be useful if you were using some sort of little tug boat ships to move chunks of a modular station design into place rather than simply building the entire thing outward from a single point.
